Simply Fresh Tostadas

Looking for a quick weekday meal? Try this super easy tostada recipe. It's perfect for busy evenings between work and evening activities. As always, this recipe is adaptable to be gluten-free and plant-based.

Simply Fresh Tostadas


  • 8 taco shells

  • 1 can refried beans

  • 1 bell pepper, sliced

  • 1 red onion, sliced

  • ½ Lg Avocado

  • 3 Roma Tomatoes, diced

  • 4 green onions, chopped

  • ½ bunch cilantro

  • 1 lime

  • ½ cup Crispy lettuce, shredded

  • ½ cup salsa

  • 1 tbsp fresh oregano

  • 1 tbsp chili powder

  • 3 cloves garlic, chopped

  • ½ cup shredded cheese or cheese alternative

  • Salt & pepper

  • Yeshi Smoky Chipotle Dressing


Step 1 Place ½ avocado, 2 diced tomatoes, most of the cilantro chopped fine & 2 chopped green onions in a medium mixing bowl. Add a pinch of salt. Mash to coarse consistency add juice of ½ lime and mix together.

Step 2 Heat refried beans over medium skillet. Add chili powder and lime juice.

Step 3 Spread beans on warmed tortilla shells. Top with veggies, salsa, cheese and Yeshi Smoky Chipotle dressing!
