Roasted Cauliflower & Chickpeas With Smoky Chipotle Yeshi

With tender roasted cauliflower and crispy chickpeas as the base, this salad offers a satisfying crunch and a hearty dose of plant-based protein. But the real stars of the show are the unexpected additions of peppery arugula, sweet Medjool dates, and briny green olives, which add layers of complexity and intrigue to every forkful.

To tie it all together, we've dressed this salad with Yeshi's Smoky Chipotle dressing, adding a smoky, spicy kick that perfectly complements the other flavors. The result? A harmonious blend of sweet, savory, and spicy that will have you coming back for seconds.




Ingredients (serves 4)


For the Salad:

  • 1 head cauliflower, cut into florets

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 4 cups arugula

  • 6 Medjool dates, pitted and chopped

  • 1/2 cup pitted green olives, sliced

  • 1/4 cup chopped fresh parsley

For the Dressing:

  • 1/4 cup Yeshi Smoky Chipotle dressing

  • 2 tablespoons olive oil

  • 1 tablespoon lime juice

  • 1 clove garlic, minced

  • Salt and pepper to taste


Directions


  1. Preheat your oven to 400°F (200°C).

  2. In a large bowl, toss the cauliflower florets and chickpeas with olive oil, salt, and pepper until evenly coated.

  3. Spread the cauliflower and chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, and the chickpeas are crispy.

  4. While the cauliflower and chickpeas are roasting, prepare the dressing. In a small bowl, whisk together the Yeshi Smoky Chipotle dressing, olive oil, lime juice, minced garlic, salt, and pepper until well combined. Set aside.

  5. Once the cauliflower and chickpeas are done roasting, remove them from the oven and let them cool slightly.

  6. In a large salad bowl, combine the roasted cauliflower and chickpeas with the arugula, chopped dates, sliced green olives, and chopped parsley.

  7. Drizzle the prepared Smoky Chipotle dressing over the salad and toss gently to coat everything evenly.

  8. Serve the salad immediately as a flavorful and satisfying meal or side dish.
