Ingredients (serves 4)
For the Salad:
1 head cauliflower, cut into florets
1 can (15 oz) chickpeas, drained and rinsed
2 tablespoons olive oil
Salt and pepper to taste
4 cups arugula
6 Medjool dates, pitted and chopped
1/2 cup pitted green olives, sliced
1/4 cup chopped fresh parsley
For the Dressing:
1/4 cup Yeshi Smoky Chipotle dressing
2 tablespoons olive oil
1 tablespoon lime juice
1 clove garlic, minced

Directions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the cauliflower florets and chickpeas with olive oil, salt, and pepper until evenly coated.
Spread the cauliflower and chickpeas in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, and the chickpeas are crispy.
