It can be tricky getting enough greens during the winter months. Salad "season" tends to be in the summer, leaving winter for root vegetables. Our simple Winter Kale Salad can be enjoyed cold or warm and is filled with potassium, fibre, and antioxidants found in deep green kale.
Ingredients (serves 2)
4 leaves of kale
1 clove crushed garlic
1 tsp fresh ginger
3 tbsp olive oil
1 cubed roasted yam
1/2 cup cherry tomatoes halved
1/2 pepper diced
1/4 cup toasted pumpkin seeds
Your favourite Yeshi!
Directions
1. Mix oil, garlic and ginger. Toss with chopped kale.
2. Place kale in a bowl and top with yams, tomatoes and peppers
3. Sprinkle with pumpkin seeds and drizzle with your favourite Yeshi!
